Yes this is a hot soup (and it’s not cold weather) but my son was craving some soup for lunch. My mother in law has often given him Campbell’s tomato soup. So I figured I’d make some… just my own. Used some of the summer squash & eggplant melange I had from dinner (sort of like ratatouille but no peppers) and pureed it with some tomatoes, chicken stock and milk. Added salt and pepper. Strained a little of it, but wanted to keep some thickness and texture.
He loves it! And it took 5 minutes.
