Here’s another meat photo. This one is of my first ever meatloaf.
It’s sort of like going to Florida… everyone that lives in this area of Connecticut seems to have gone to Florida but me. But then they say, “well you’re not really missing anything”. Just like people around me make or grew up on meatloaf. I do remember my mom making it once or twice but it wasn’t a regular dinner dish.
I thought I wouldn’t be missing out on anything by not cooking meatloaf. But it was good. Very good.
This recipe I got from Mark Bittman’s How To Cook Everything, but I made some adjustments… added kale, different herbs and some NZ Wattie’s Tomato Sauce (similar to ketchup) on top. I also changed cooking method by turning oven to 475 for last 5 minutes to crisp bacon a bit more.
The kids LOVE it!
Maybe I should give Florida a chance.
