Fritatta- a perfect dish for breakfast or lunch… Or dinner for that matter.
This one I made with baby potatoes, goat cheese, bacon, scallions, tomatoes, and arugula.
Just whisk 1/4 cup of milk with 6 eggs, salt and pepper. Pour into hot sauté pan (med-high) with scallions and stir with silicon spatula. As it forms add other ingredients. Let cook until mostly firm. Finish to cook top under broiler. Serve and enjoy!!
A great thing about fritattas and omelets— add whatever ingredients you/your kids like.
