A simple way to make a delicious avocado salsa/chunky guacamole.
Use Trader Joe’s Salsa Verde (Tomatillo salsa) to add nice spicy twist. I find sometimes chili peppers aren’t hot enough or are too hot and then sometimes their heat grows over time… so it’s tough to gauge your heat quotient. By adding the salsa verde you can judge the spiciness right away. This is especially helpful with getting it right for kids— most (not all) won’t like it too spicy.
Avocado Salsa
2 avocados
1/4 red onion
2-3 Tbsp salsa verde
juice of 1 ripe lime
1 garlic scape finely sliced (or small garlic clove)
handful of chopped fresh cilantro
1 plum tomato (seeded and diced) or handful cherry/grape tomatoes
salt and pepper
Mix together and serve immediately or chill for a short time before serving.
Tip for Avocado:
Cut avocado in half so one piece has the pit and other doesn’t. With knife, score diagonally and then again in opposite direction; scoop out of shell with a spoon. For pit: carefully, tap knife into pit so it’s partially in it then twist bottom of avocado in while twisting knife/avo pit. Pit should pop out. (Be careful not to do it too hard or pit might split and knife can cut your hand!)
I think that avocados, limes and cilantro just scream summer!
